Resumo

Objetivo: to evaluate the physicochemical and microbiological profile and the presence of antibiotics in pasteurized milk sold in the city of Umuarama / Paraná. Métodos: 100 samples of pasteurized milk, from five different brands, sold in supermarkets in the city of Umuarama, Paraná, were analyzed. Physical-chemical and microbiological analyzes were carried out, in addition to a survey of antimicrobial residues. Resultados: 18% of the samples showed alterations in at least one of the physicochemical analyzes performed. In the microbiological evaluation, 22% of the samples had levels of total coliforms above the tolerated limit, 2% were contaminated by Escherichia coli and 12% had a mesophilic aerobic count above the maximum limit allowed by legislation, in addition to the presence of antimicrobial residues in 18% of the total samples. Conclusão: the results of this study indicate that there are failures in the quality control of pasteurized milk sold in the city of Umuarama - PR and may pose risks to the health of consumers, especially children, elderly and immunocompromised.
