Resumo

Aflatoxins (AFs) are the most harmful among the mycotoxins commonly present in wide variety of natural substrates such as grains, nuts, food products, etc. This presents an important safety concern as evident in the incidences of its health implication (hepatocellular carcinoma) and economic losses reported widely. Biological decontamination of mycotoxins, using enzymes offers an attractive alternative for gently eliminating or control of this toxins as it provides a possible means non-toxic or less toxic products of degradation and safe-guarding the quality of food and feed. Peroxidase (POD) are oxidoreductases produced by a number of microorganisms and plants, due to broad substrate specificity, multifunctional properties and availability of peroxidases have proven its application in various analytical, industrial and biochemical processes, catalyzing the oxidation of the organic and inorganic substrates using hydrogen peroxide as cofactor. In this study, was evaluated the ability of peroxidase (POD) enzyme on AFB1 and AFM1 reduction in model system using of HPLC analysis. The results showed great potential POD to reduce AFB1 and AFM1 levels, after 60 min of incubation,achieving a reduction of up to 67% and 56%, respectively. Therefore, the application of POD to food systems, as milk and dairy products, may be promising to mitigate AFs contamination and toxicity.
