ALTERNATIVE SOURCES FOR OBTAINING VEGETABLE OILS: A THEORETICAL FRAMEWORK

The present theoretical framework evidences the importance of special oils, originated from alternative sources, such as fruit seeds, aiming to minimize the environmental impact caused by these residues. The importance of vegetable oils, agro-industrial waste, and their use as alternative sources of oil extraction were approached. The use of fruit seeds for oil extraction may bring great benefits for human health, due to the presence of high amount of protein, carbohydrate, lipids, fibers, bioactive compounds with phenolics, carotenoids, tocopherols, and other antioxidants. Besides, with the use of seeds, there is a decrease in the amount of agro-industrial waste, since they become co-products for extraction.
